Why do so many people buy ultra-portable laptops and then complain about not having enough ports?

Not bad at all. My Latitude 5430 has 2 Thunderbolt 4, 2 USB-A, an HDMI, a MicroSD reader, a SIM slot, an SD card slot, and Ethernet for example.

Who’s complaining about a lack of ports?

I usually only use a single USB-C port for two displays, charging, and a 10gbps NVMe drive.

Everything else is wireless, like my earbuds, mouse, keyboard, and printer.

My laptop has an Ethernet port with 3 USB ports, a USB-C, and an aux jack for my headphones. I love it.
